Vegan Quinoa and Avocado Lettuce Wraps
These Vegan Quinoa and Avocado Lettuce Wraps are so delicious
Ingredients:
1 cup quinoa, rinsed and drained
2 cups water
1/2 tsp turmeric
1/2 tsp ground cumin
1/4 tsp salt
1/4 tsp black pepper
1 small red bell pepper, finely chopped
1/2 cup red onion, finely chopped
1/2 cup fresh parsley, chopped
1/2 cup fresh cilantro, chopped
1/2 cup cherry tomatoes, halved
1 small avocado, diced
1/4 cup lemon juice
2 tbsp olive oil
1 tbsp honey (optional, or use maple syrup for a vegan version)
12 large lettuce leaves (such as bibb or butter lettuce)
Instructions:
Cook the Quinoa:
In a medium saucepan, combine the quinoa, water, turmeric, cumin, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender.
Remove from heat and let it cool slightly.
Prepare the Filling:
In a large bowl, mix the cooked quinoa with the red bell pepper, red onion, parsley, cilantro, cherry tomatoes, and avocado.
In a small bowl, whisk together the lemon juice, olive oil, and honey (or maple syrup). Pour this dressing over the quinoa mixture and stir to combine.
Assemble the Wraps:
Rinse the lettuce leaves and pat them dry. Place a large lettuce leaf on a plate and spoon a generous amount of the quinoa mixture into the center.
Fold the bottom of the lettuce leaf over the filling, then fold in the sides, and roll up to enclose the filling.
Serve immediately, or refrigerate the wraps for a few minutes to chill before serving.
