Asian-Style Chicken Lettuce Wraps
Ingredients:
1 lb ground chicken (or turkey)
1 small onion, finely chopped
2 cloves garlic, minced
1 small carrot, finely chopped (optional)
1/2 cup water chestnuts, chopped
1/4 cup green onions, chopped
1/4 cup fresh cilantro, chopped
2 tbsp low-sodium soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tbsp sesame oil
1 tsp ginger, minced
1/2 tsp red pepper flakes (optional)
1/2 tsp five-spice powder
1/2 tsp black pepper
1/4 tsp salt
12 large lettuce leaves (such as iceberg or romaine)
1/4 cup hoisin sauce (optional)
Fresh lime for squeezing
Instructions:
Prepare the Filling:
Heat a large skillet over medium-high heat. Add the ground chicken and cook until it's no longer pink, breaking it into small pieces as it cooks.
Add the onion, garlic, and carrot, and cook until the vegetables are soft, about 5 minutes.
Stir in the water chestnuts, green onions, and cilantro.
In a small bowl, mix together the soy sauce, rice vinegar, honey, sesame oil, ginger, red pepper flakes, five-spice powder, black pepper, and salt. Pour this mixture over the chicken and vegetables, and cook for another 2-3 minutes, stirring to combine.
Assemble the Wraps:
Rinse the lettuce leaves and pat them dry. Place a large lettuce leaf on a plate and spoon a generous amount of the chicken mixture into the center.
Fold the bottom of the lettuce leaf over the filling, then fold in the sides, and roll up to enclose the filling.
Serve with a drizzle of hoisin sauce and a squeeze of fresh lime on top. You can pack the components separately and bring them to picnic, for example. Combining them there, you will have less headaches with caring for initial food preparation
